When it comes to a marble or soapstone edge, remember that the more square your edge is, the more apt it is to chip. You can still mostly achieve the squared look, just have the top rounded off. Stone fabricators refer to it as a “top round”, 1/8″ radius. My suggestion to have the whole kitchen “wear” the same, request the edge around your undermount sink to have the same edge as the perimeter; that way you won’t only see chips around the sink.
